Cambridge Global Food Security
Ian is the Professor of Soft Solids and Surfaces in the Department of Chemical Engineering and Biotechnology. Much of his work on the rheology and processing of soft solids, surface layers (depositing layers and removing them) is inspired by issues in food manufacturing, process hygiene and sustainable operations. He is the Editor-in-Chief (Food) of the IChemE journal Food & Bioproducts Processing.
