Dr. Ibsen is an epidemiologist interested in how our dietary habits, together with our genes and our physical and social environment, contribute to health and disease. He is particularly interested in plant-based diets, type 2 diabetes and improving methods within nutritional epidemiology, including causal inference methods and food intake biomarkers.

He has a PhD in epidemiology from the Department of Public Health at Aarhus University in Denmark and is currently doing an international postdoc project funded by the Independent Research Fund Denmark at the MRC Epidemiology Unit, University of Cambridge School of Clinical Medicine, where he is investigating potential mechanisms linking different dietary patterns, including plant-based diets, to development of type 2 diabetes and cardiovascular disease.

Dr. Ibsen is also affiliated to the Steno Diabetes Center Aarhus, the Department of Public Health at Aarhus University and the Department of Nutrition, Sports and Exercise at the University of Copenhagen.
